At the end of the day it’s just a Linux device so any Bluetooth peripherals should just work. Any controller should basically be plug and play, and I’m sure most mics will be fine too
One thing I would caution is to keep your expectations in check for docked performance. The Deck can run a lot of games on handheld mode because it’s built in screen is 800p (a little taller than 720p). You can plug it into a higher resolution monitor and it will work perfectly but game performance will start to struggle on heavier games that barely work on the low res built in screen.
So it will work just fine but it’s not going to be able to run the newest games well or even the heaviest games that work in handheld mode if you plug it into a 1080p or 1440p monitor and try to run heavy games at that resolution.
Why not just buy a PC at that point then? The whole point of a steam deck is that its portable and playable on the go. If you aren’t going to use it for the main features then you could probably buy one of those super compact PCs and have a better overall time.
I use a PS4 Dual Shock controller with mine, and a Steel Series wired headset if I need a mic, or some Apt-X LL bluetooth headphones if I just want to game.
I love my Steam Deck for quick games like Slay the Spire and stuff where you can jump in and out while sitting on the bus or something like that.

If you are only go to play it docked, you should have at least bought a laptop so you have a screen, mouse and keyboard.
A dock with at least 3 usb ports, a keyboard, and mouse.
And any mic that works on Linux will do, I use a blue yeti nano.
To answer your question, yes, any controller works and any mic. You can use Bluetooth, USB, or 3.5mm jack for mic.
You can dock your deck, but don’t expect it to be high performance, especially on modern games. Let me explain, I recently played Assassins creed black flag, on handheld 800p 60fps was flawless. When I docked at 1080p, there was some struggle at 60fps.
You mention you don’t notice a difference, go play on a ps2 or ps3, then come to PC, I promise you that you’ll notice the difference.
You also mentioned not being tech savvy, brother, this thing runs Linux, majority of people have never touched anything besides windows and MacBook, I highly advise you to do research about the platform.
Tbh, I’d tell you that you should’ve gotten an xbox series s since you only had $300 and plug in a mouse and keyboard to treat it like a PC, then use the controller to play, since you’re already going to be using a controller on steam deck. All games are pretty much the same, cross platform now a days, has discord, and you’re doing digital games anyway. Xbox also has backwards compatibility on lots of good games, only thing you’d really be missing out on are steam sales and emulation.
