a lot of people chose data science because of all the good things they heard but now it looks like it’s hard to go up in that type of career
Just hold on, things will get better.
I’m a Senior DA in the US, so I’m unfamiliar with the UK job market. My advice is to look at what those Senior roles require and work on those skills. Hopefully over the next year, your resume looks good enough to go after those senior roles and a decent pay increase.
Edit to say: Your feelings are valid, but I feel like this may be a medium term issue that can be solvable.

Maybe try to make a difference and to get additional certifications/degrees? Work, build a project on your side for your portfolio?
Generative AI really took a bite out of the DA market. It’s easy to see why.
Apply for the senior roles! You have three years experience that qualifies for senior IMO
I’m sorry. Are there any other skills you have that you could use to switch careers? If you aren’t making much find something else that you enjoy.
I’m really surprised, considering that I see so many data analyst positions (that ask for 1+ years experience) on my LinkedIn. They even offer pretty good salaries from £35k onwards. Whereabouts in the UK are you trying to find a DA position?
